A little known steak but delicious. Nevertheless, we’re giving it our recommendation and it’s gaining popularity. Cook to medium rare only.
A whole cut steak from the Fore Quarter. Located around the shoulder blade (Scapula), it needs a lot of trimming and removal of gristles so that it will cook tender. Absolutley fantastic when seasoned well and shallow fried.
