500g Pork Tenderloin
Tenderloin is the leanest cut of pork, comparable to a skinless chicken breast. Cut from the loin, this tender elongated joint can be marinated or stuffed to roast or prepared as filets or medallions. Again, be careful not to overcook to keep it succulent.
This Pork is from the Metfield Pig Herd. Peter Mortimer has supplied us with top quality pigs for many years. We trust his judgement to send us the best pigs he has. A prize winning herd which can be found winning lots of rosettes at county shows all over East Anglia.
